This one is easy and so flavorful!*Note: To add a little more spiciness I throw in a jalapeño pepper cut up into tiny pieces.

Easy Chicken & Veggie Soup- My Sister-In-Law’s Recipe
This is simple and delicious!
1 cup chopped carrots
1 onion chopped
1 green and 1 yellow squash chopped
2 cans of diced tomatoes with basil, garlic & oregano
shredded chicken (I buy a rotisserie)
big can of low sodium chicken broth
cooked rice or couscous
Directions: Sauté all the veggies except the tomatoes in a little olive oil, once tender add in the tomatoes with the juices, add in already cooked chicken, broth and cooked grain. Cook on low for 40 minutes and enjoy!
